Ingredients for cake

140ml vegetable oil

2 eggs

200g light brown sugar

300g grated carrots

100g sultanas

75g pecans

180g self raising flour

1 pinch salt

1/2 tsp bicarb of soda

1 generous tsp cinnamon

1/2 tsp nutmeg

1/2 generous tsp mixed spice

Method

1. Preheat the oven to 150 degrees

2. Oil and line two 8 inch tins

3. Beat the eggs in a large bowl, then add the oil, brown sugar, grated carrots, sultanas and chopped nuts

4. Sift in the rest of the dry ingredients and bring the mixture together using a wooden spoon or large metal spoon

5. Pour the mixture into the prepared tins and smooth the top. Bake for 25 mins or until your skewer comes out clean

6. Remove from the oven and allow to cool in the tin for 5 minutes before turning out onto a wire rack

Ingredients for frosting

300g icing sugar sifted

50 unsalted butter

125g cold cream cheese

Method

1. Beat the icing sugar and butter together in a mixer on medium-slow speed until the mixture comes together and is well mixed

2. Add the cream cheese in one go and beat until completely incorporated.

3. Turn the mixer up to medium- high speed

4. Continue to beat the frosting until it is light and fluffy, at least 5 minutes
